Homemade Hot Chocolate

When the air is frigid outside, nothing is more soothing than a nice toasty mug of hot chocolate.  I made this today during the cold snap we’ve had here.  There’s a small chance of snow come Friday–here’s hoping we get some accumulation!

Homemade Hot Chocolate

Adapted from MyRecipes

1/4 cup water
1/4 cup honey
2 1/2 tablespoons unsweetened cocoa
1/4 teaspoon ground cinnamon
1/8 teaspoon salt
2 cups whole milk
1 teaspoon vanilla extract

Combine first 5 ingredients in a large, heavy saucepan. Bring to a boil over medium-high heat, stirring constantly. Gradually add milk and extract, stirring constantly with a whisk. Heat to 180° or until tiny bubbles form around edge, stirring with a whisk (do not boil). Serve with freshly whipped cream and a cinnamon stick, if desired.

A mildly sweet, dense cookie would be delightful with this, as it would offset the sweetness of the cocoa.  I think a shortbread or biscotti would be excellent, although I haven’t tried either.  I’m hoping to try a shortbread recipe I found soon–maybe I’ll try it if it snows this weekend!

      Thanks! It’s been so much fun putting it together! I’m hoping this will be the inspiration I needed to start blogging regularly again.
